Who Says it is Hard to Get Children to Eat Well?

So, I took the girls with me to run errands yesterday morning, and then we went to the local natural science museum. By the time we got back home, we were all tired and hungry. The day called for something quick and simple.

I had part of a loaf of homemade whole wheat and flax bread I'd made Monday morning. I cut four slices, sprinkle of basil, garlic, and just a touch of shredded cheddar and jack cheese, and toasted them in the oven just long enough to melt the cheese and give the edges a nice crunch. I paired it with a simple spinach salad and red grapes.

Those plates were cleaned in record time!
