Today's recipe is one of my family's favorites. Both girls love cheesy grits, easily gobbling up adult sized portions if we didn't require them to eat the other items offered with dinner. Plus, they do go a long way toward encouraging Boo to eat her broccoli since cheesy grits apparently makes a perfect dip for the spears.
Cheesy Grits
3 Cups Water
7 Tbsp. Grits
1 tsp. Garlic Powder
1 tsp. Ground Black Pepper
1/3 cup shredded cheese
In a medium sauce pan, bring three cups of water to a boil. Spoon in 7 Tbsp. plain grits, 1 tsp. black pepper, and 1 tsp. garlic powder. Stir frequently until the grits are just a little too runny and remove from heat. Add shredded cheese and stir in a figure eight pattern until melted.
Makes 4 servings.
